Roasted chickpeas without skin (phutana, peeled roasted chana, yellow roasted chana) are whole desi chana roasted in hot sand, then passed over emery rollers to remove the seed coat. Elysium Agri exports them in bold, round grades with very low broken content, for snack makers, confectioners, sattu millers and repackers.
Removing the skin gives a bright yellow, round chana with a milder, cleaner taste and a smoother bite.
