Hulled or Unhulled: What's the Difference?
Hulled sesame has its outer seed coat removed. That changes the colour, taste, nutrition, shelf life and price.
For tahini, hulled sesame is roasted (around 130 °C) and ground. Hulled seed gives a lighter, smoother, less bitter paste than unhulled.
